Its origin goes back to Christopher Columbus in the 15th century when he went on his quest to find black pepper. One of the things he found under North America?s sun was chili pepper which Harissa is now made from. It has entered almost all kitchens in the world including the Middle East.     The founder of Le Coq Noir, Frédérique Lacasse, is originally from the Madagascar capital city of Antananarivo. She grew up with the diverse Creole cuisine and the recipes of her ancestors. Later the French family moved La Réunion where Frédérique filled her recipe collection with culinary secrets of the Indian Ocean island. In 1979 the family moved back to France. There the idea to found Le Coq Noir was born and to market the products in Europe. In the small factory Avignon delicacies such as sauces, pastes and confits were created in manual labor. Le Coq Noir does not use things such as coloring additives, preservatives or the like. Top quality products and sustainable packaging are very important to Joel and Alix Kautzmann, Frédérique?s children. Alix took on the company from her parents in 2009. She thought about selling the Le Coq Noir company, however Alix realized the importance of the preparation and tradition of the products of her ancestors. The passion for the products was past down to her. They were after Frédérique?s children who first tried their hand at, so-called ?plâts ". Alix and Joel are still driven by this passion to try out new things. This is how new creations from the Antilles, India and Maghreb were created. And they are not finished creating new products. The ?COQ d`OR" Award from the French Gourmet Guide and from the reports Le Coq Noir in the German magazine ?Der Feinschmecker" and numerous other French magazines are a testament that this family business is on the right track.
